Yes, you heard us right, ancient grains are old AND cool. Loaded with nutrients and packed with awesome texture and flavor, what’s not to love?⁣

Here are some of our favorites: ⁣
(each yields about 3-4 cups cooked grain)⁣
1 - Buckwheat - 1 cup buckwheat + 2 cups water, cook 20 minutes⁣
2 - Bulgur - 1 cup bulgur + 2 cups water, cook 10-15 minutes⁣
3 - Millet - 1 cup millet + 2 1/2 cups water, cook 20 minutes⁣
4 - Quinoa - 1 cup quinoa + 2 cups water, cook 12-15 minutes⁣
5 - Sorghum - 1 cup sorghum + 4 cups water, cook 25-35 minutes⁣

What do you with them? We like to toss them in soups, stews and salads or throw a stir fry on top of them. They're awesome as a base for grain bowls and are a perfect sub many recipes where rice is called for. The options are endless!⁣

YUM! A fried rice that is LOW CALORIE & LOW SUGAR! Try this super tasty recipe as a side dish or main course - add in your favorite protein & voila!⁣

BROCCOLI & MUSHROOM FRIED RICE ⁣

INGREDIENTS⁣
⁣
2 cups Broccoli (chopped into small florets)⁣
1 tbsp Avocado Oil⁣
2 cups Mushrooms (sliced)⁣
1/2 Garlic (clove, minced)⁣
1 tbsp Coconut Aminos⁣
1/4 cup Almonds (slivered)⁣
1 tbsp Onion Powder⁣
1 tsp Sea Salt⁣
3 stalks Green Onion (chopped)⁣
1/4 cup Cilantro (chopped)⁣
⁣
DIRECTIONS⁣
⁣
Add the broccoli florets to a food processor and pulse until a rice consistency forms.⁣
⁣
Heat a large pan over medium heat and add in the avocado oil. Once the oil is warmed, add in the broccoli, mushrooms and garlic. Cook for 10 minutes.⁣
⁣
Once the ingredients are cooked through, add in the coconut aminos, almonds, onion powder and sea salt. Cook for roughly 3 minutes, stirring often to combine the flavors. Remove from heat.⁣
⁣
Top with green onions and cilantro. Divide between plates and enjoy!⁣

I am so shamefully late to the Instant Pot bandwagon 🤦🏼‍♀️ so I'm gathering recipes & this Paleo Orange Chicken is delicious...& EASY! 💥⁣

⚡️INGREDIENTS⚡️⁣
⁣
1 cup arrowroot⁣
1/2 tablespoon ground ginger⁣
1 teaspoon granulated garlic⁣
1/4 teaspoon ground cinnamon⁣
1 teaspoon kosher salt⁣
3 pounds boneless, skinless chicken, cubed into approximately 1-inch chunks⁣
1/2 cup coconut oil⁣
3/4 cup coconut aminos⁣
1/4 cup coconut sugar⁣
1/4 cup toasted sesame oil⁣
10-15 dashes Red Boat fish sauce⁣
2 tablespoons minced fresh ginger⁣
1 tablespoon minced fresh garlic⁣
1 teaspoon crushed red pepper flakes, optional⁣
6-10 dried chile de àrbol⁣
zest and juice of 2 navel oranges⁣
cauliflower rice or vegetable noodles like zoodles, to serve⁣
chopped scallion and sesame seeds, to garnish, optional⁣
⁣
⚡️DIRECTIONS⚡️⁣
⁣
In a large mixing bowl, whisk together the arrowroot, ground ginger, granulated garlic, ground cinnamon, and salt. Add the chunks of chicken, coating each piece thoroughly with the arrowroot mixture. Hands (or tongs) are the best tools for this job.⁣
 ⁣
Heat the 1/2 cup of coconut oil on sauté mode of the Instant Pot for a few minutes. Carefully add the chicken to the hot oil, being sure to shake off excess arrowroot mixture beforehand. Stir every few minutes, allowing the chicken to brown upon contact with bottom of Instant Pot.⁣
⁣
Once most of the chicken pieces are browned, add the sauce, chiles de àrbol, orange zest and juice; stir to combine.⁣
⁣
Cover and switch Instant Pot to high pressure mode for 10 minutes. Make sure vent is closed.⁣
⁣
Once cycle is complete, quick release the pressure valve.⁣
⁣
Serve chicken immediately with cauliflower rice or vegetable noodles. Garnish with chopped scallion and sesame seeds if you’d like.⁣
